would there be a way to choose whether or not to use these excercises, if we do not have Wii Fit Plus?

Absolutely. There will be another variable to select when creating routines.

wii noob here. do they get added through a network or what? i'd love to do the dance one - where is it and how do i get it? also is there a walking exercise - i love the running but would like to add or substitute walking to that.

No, I manually have to create them (not a huge operation yet, lol). Which dance one are you referring to? I'm not sure about a walking exercise, however on the routine generator, you can substitute running exercises because some members find them hard on the joints.
