Low Carb Chili

Ingredients:
  • 1 pound lean buffalo
  • 4 low fat smoked sausages
  • 1 cup onion - diced
  • 2 6oz cans low-salt tomato paste
  • 2 ts pinch chili powder (add more as needed for spicier chili)
  • 2 16oz cans dark red kidnet beans - undrained
  • 20 oz low sodium beef broth
  • (optional) 1/2 cup chopped green pepper
How to Prepare:
  1. Sautee onion, pepper, beef and sausages until sausage and beef are browned
  2. Strain under hot water until beef appears less oily
  3. Combine all remaining ingredients in a pot and bring to a boil.
  4. Simmer and add seasonings
